You can also use a mix of mushrooms here by choosing 2-3 different types of mushrooms.

Just to keep one thing in mind while buying your mushrooms – the darker the gills, the more mature and flavourful your mushroom will be.

 

HOW TO MAKE CREAMY KETO MUSHROOM SOUP?

I’ve come up with a very simple keto-friendly cream of mushroom soup. It’s a slow cooker recipe but takes very little time to prepare.

I’ve also shared the instant pot recipe of the same under the tips and tricks heading if you intend to make an instant pot creamy keto mushroom soup.

  1. Heat a pan, and add butter, garlic, and sliced onions. Sauté till they become
    translucent.
  2.  Now add the chopped mushroom, salt, and pepper. Sauté them till all the
    water from the mushroom is evaporated.
  3. Close the lid so the water dries up quickly.
  4. Add the vegetable stock/chicken broth.
  5. Add the herbs and bring them to a boil.
  6. Switch off the oven and let it cool down for some time.
  7. Use an electric blender or mixer to make a purée of the cooked mushrooms.
  8. Again, switch on the oven and transfer the purée to the same pan, add your heavy cream now, and give it a good stir.
  9.  Garnish the soup with some butter-fried sliced mushrooms and heavy cream.

How to store creamy mushroom soup?

Yes, you can store creamy mushroom soup, though the life of mushroom soup is less compared to others.

It is true that the cream can separate from the rest of the liquid during freezing, but the color and texture should return to normal upon thawing.

  1. Cool down the soup completely before storing it. Add salt to preference.
  2. Put it in an airtight container and you can refrigerate it for up to 4 days. Reheat it when needed.
  3. You can freeze it for 4 weeks. Bring it to room temperature before reheating.

    My Take on Keto Creamy Mushroom Soup

    This is our all-time in-house favorite recipe. Starting from the kids to my friends and family- everyone simply loves my version of creamy mushroom soup.

    Not only for dieters but otherwise also you can have this soup.

    There are days when I just feel like eating clean, simple, and short, and this is one of my go-to recipes for such days.

    It is a perfect match for winter dinners or early dinners.

    Its super creamy and thick texture makes it more filling and delicious.

    It has got a very high nutritional value as well. You can have it with your choice of keto-friendly bread, a bowl of
    salad, or just as a whole meal.
